Chipotle Honey Chicken

Sweet, smoky and slightly spicy chicken coated in a glossy, sticky Chipotle Honey glaze. Made using The Paste Co. Chipotle Paste, crafted with all-natural, clean ingredients. With just a handful of ingredients and minimal prep, this is an easy way to make seriously flavour-packed chicken at home.

Ingredients

  • 1 whole chicken, skin removed and jointed into pieces (around 1.5–1.8kg), for the chicken
  • 2 tbsp honey, for the chicken
  • 2 heaped tsp The Paste Co. Chipotle Paste, for the chicken
  • Salt, to taste, for the chicken
  • 1–2 tbsp olive oil, for cooking the chicken
  • 2 tbsp honey, for the Chipotle Honey glaze
  • 2 heaped tsp The Paste Co. Chipotle Paste, for the Chipotle Honey glaze
  • Small handful fresh coriander, roughly chopped, to finish

Method

  1. Marinate the chicken. Place the chicken pieces into a large bowl and add 2 tbsp honey, 2 heaped tsp The Paste Co. Chipotle Paste and salt. Mix everything together until all of the chicken pieces are evenly coated.
  2. Cook the chicken. Heat the olive oil in a large frying pan over a medium heat, add the chicken pieces and cook for around 15–20 minutes, turning regularly so they develop good colour and cook evenly. As you are using different cuts from a whole chicken, some smaller pieces may cook more quickly than others — remove these earlier if necessary. Make sure every piece is completely cooked through and that the thickest part reaches at least 75°C, checking away from the bone. If your pan is not large enough to comfortably hold all of the chicken, cook it in batches rather than overcrowding the pan.
  3. Make the Chipotle Honey glaze. While the chicken cooks, mix together 2 tbsp honey and 2 heaped tsp The Paste Co. Chipotle Paste, stirring until completely combined.
  4. Glaze the chicken. Once the chicken is completely cooked, reduce the heat and add the Chipotle Honey glaze. Turn and toss the chicken through the glaze for around 1–2 minutes, until every piece is coated and the glaze becomes glossy and sticky. Keep the heat relatively low at this stage to prevent the honey from catching or burning.
  5. Finish. Take the pan off the heat and sprinkle over the fresh coriander. Serve immediately and spoon any remaining Chipotle Honey glaze from the pan over the chicken.

Tips

  • Add the final glaze at the end. Honey can catch quite quickly, so wait until the chicken is cooked before adding the final Chipotle Honey mixture. You only need enough time for it to become sticky and coat the chicken.
  • Do not overcrowd the pan. Give the chicken enough room to develop colour. If necessary, cook it in batches.
  • Check the individual pieces. A jointed chicken contains pieces of different sizes, so do not rely entirely on cooking time — smaller pieces may be ready before larger ones.
  • Adjust the heat to your taste. For a stronger smoky and spicy flavour, increase the amount of Chipotle Paste in the glaze.
