Ingredients

  • 1 large baking potato
  • 200g boneless, skinless chicken thighs, diced
  • 2 heaped tsp The Paste Co. Chipotle Paste
  • 2 tbsp Greek yogurt
  • 1 tbsp finely diced red onion
  • 1 tsp lime juice
  • 30g mature Cheddar cheese, grated
  • Sliced pickled jalapeños
  • 100g Greek yogurt (for the Garlic Herb Drizzle)
  • 40g The Paste Co. Garlic Herb Paste (for the Garlic Herb Drizzle)
  • 1 tbsp water, optional for a thinner consistency (for the Garlic Herb Drizzle)
  • Gherkins, to serve (optional)

Method

  1. For the Garlic Herb Drizzle: add the Greek yogurt and The Paste Co. Garlic Herb Paste to a bowl. Mix until smooth. Add a little water if you prefer a thinner drizzle. Transfer to a squeeze bottle or keep in the bowl until ready to use.
  2. Cook the baking potato until crisp on the outside and fluffy in the centre.
  3. While the potato cooks, heat a frying pan over a medium heat and cook the diced chicken thighs for 5–7 minutes until lightly golden and cooked through.
  4. Transfer the cooked chicken to a bowl and allow it to cool for a couple of minutes.
  5. Add the Greek yogurt, The Paste Co. Chipotle Paste, diced red onion and lime juice. Mix until the chicken is evenly coated in the creamy chipotle sauce.
  6. Slice the baked potato open and fluff the inside with a fork.
  7. Sprinkle over the grated Cheddar while the potato is still hot, allowing it to melt.
  8. Spoon the Chipotle Chicken generously over the potato.
  9. Drizzle approximately 1 tablespoon of the Garlic Herb Drizzle over the top.
  10. Finish with sliced pickled jalapeños and serve immediately with gherkins if desired.

Tips

  • Allow the chicken to cool slightly before mixing with the Greek yogurt to keep the filling smooth and creamy.
  • Fresh lime juice adds brightness and balances the smoky chipotle flavour.
  • For an extra crispy potato, return the fluffed potato to the oven or air fryer for 5 minutes before adding the toppings.
  • The Garlic Herb Drizzle adds a cool, creamy finish that pairs perfectly with the smoky chipotle chicken.
  • Adjust the amount of pickled jalapeños to suit your preferred spice level.

Frequently asked questions

Can I cook the potato in an air fryer?

Yes. Air fry at 200°C for 45–60 minutes, turning halfway through, until the skin is crisp and the centre is fluffy.

Can I use chicken breast instead of thighs?

Yes. Chicken breast is a leaner option, but we recommend boneless, skinless chicken thighs for the juiciest and most flavourful result.

Can I make the filling ahead of time?

Yes. Prepare the Chipotle Chicken filling in advance and refrigerate it until needed. The Garlic Herb Drizzle can also be made ahead of time and stored separately until you're ready to serve.

Can I make it spicier?

Absolutely. Add extra The Paste Co. Chipotle Paste or top with more sliced pickled jalapeños for an extra kick.

What should I serve it with?

It's delicious on its own or served with gherkins, a fresh salad or crunchy vegetables.
