Chipotle Chicken Burrito Bowl

A smoky, flavour-packed burrito bowl with fluffy Chipotle rice, golden chicken, avocado, sweetcorn and two quick creamy sauces. Made using The Paste Co. Chipotle and Garlic Herb Pastes, made with all-natural, clean ingredients. Better, cheaper and easier than grabbing a takeaway, and completely customisable with your favourite vegetables.

Ingredients

  • 300g basmati rice (about 1½ cups), for the smoky Chipotle rice
  • 500ml water (2 cups), for the smoky Chipotle rice
  • 2 heaped tsp The Paste Co. Chipotle Paste, for the smoky Chipotle rice
  • ½ tsp salt, for the smoky Chipotle rice
  • 600g chicken breast, diced, for the Chipotle chicken
  • 2 heaped tsp The Paste Co. Chipotle Paste, for the Chipotle chicken
  • 1 tbsp ghee or olive oil, for the Chipotle chicken
  • ½ tsp salt, for the Chipotle chicken
  • 120g sour cream (about ½ cup), for the creamy Chipotle sauce
  • 2 heaped tsp The Paste Co. Chipotle Paste, for the creamy Chipotle sauce
  • 1–2 tbsp water if needed, for the creamy Chipotle sauce
  • 120g Greek yogurt (about ½ cup), for the creamy Garlic Herb sauce
  • 2 heaped tsp The Paste Co. Garlic Herb Paste, for the creamy Garlic Herb sauce
  • 1–2 tbsp water if needed, for the creamy Garlic Herb sauce
  • 1 large avocado, sliced, to assemble
  • 150g sweetcorn (about 1 cup), to assemble
  • Fresh coriander, to assemble (optional)
  • Any additional vegetables or toppings you like (optional)

Method

  1. For the smoky Chipotle rice: rinse the basmati rice thoroughly under cold water until the water runs mostly clear, then drain.
  2. Add the rice to a saucepan with 500ml (2 cups) water, 2 heaped tsp The Paste Co. Chipotle Paste and ½ tsp salt, stirring to distribute the paste evenly.
  3. Bring to a gentle boil, then reduce the heat to low, cover with a lid and cook for 10–12 minutes until the water has been absorbed and the rice is tender.
  4. Turn off the heat and leave covered for 5 minutes, then fluff gently with a fork.
  5. For the Chipotle chicken: add the diced chicken to a bowl with 2 heaped tsp The Paste Co. Chipotle Paste and ½ tsp salt, and mix until the chicken is evenly coated.
  6. Heat 1 tbsp ghee or olive oil in a large frying pan over a medium-high heat. Add the chicken and cook for 7–9 minutes, turning occasionally, until nicely golden and completely cooked through, then remove from the heat and set aside.
  7. For the creamy Chipotle sauce: mix the sour cream with 2 heaped tsp The Paste Co. Chipotle Paste until smooth, adding 1 tbsp water at a time if you would like a thinner sauce for drizzling.
  8. For the creamy Garlic Herb sauce: mix the Greek yogurt with 2 heaped tsp The Paste Co. Garlic Herb Paste until smooth, adding 1–2 tbsp water if needed to create a drizzleable consistency.
  9. To assemble: divide the smoky Chipotle rice between four bowls and top each with the golden Chipotle chicken.
  10. Add the sliced avocado and sweetcorn, then drizzle over both the creamy Chipotle sauce and the creamy Garlic Herb sauce.
  11. Finish with fresh coriander if desired and serve immediately.

Tips

  • Flavour the rice itself. Adding Chipotle Paste directly to the cooking water gives you smoky, flavourful rice rather than plain rice underneath all your toppings.
  • Don't overcrowd the chicken. Use a large enough pan so the chicken can become golden rather than steaming.
  • Adjust both sauces to your preferred consistency. Start without water, then add a tablespoon at a time until they're thin enough to drizzle.
  • Add the avocado just before serving. This keeps it fresh and prevents it from browning.
  • Make the bowl your own. Avocado and sweetcorn work really well here, but the recipe is designed to be customisable. Add whatever vegetables you have available.

Frequently asked questions

Can I use chicken thighs instead of chicken breast?

Yes. Boneless, skinless chicken thighs work really well and will give you an even juicier result. They may need slightly longer to cook depending on their size.

What other vegetables can I add?

Pretty much anything you enjoy in a burrito bowl. Peppers, red onion, lettuce, tomatoes, cucumber, black beans or roasted vegetables would all work well.

Can I make this vegetarian?

Yes. Leave out the chicken and replace it with black beans, kidney beans or your favourite vegetables. Coat them with a little Chipotle Paste for extra flavour.

Can I prepare the bowl in advance?

Yes. The rice, chicken and sauces can all be prepared ahead of time and stored separately in the fridge. Add the avocado just before serving.

Can I make the sauces thinner?

Yes. Add water 1 tablespoon at a time until they reach your preferred consistency.

Is the Chipotle Paste very spicy?

The finished heat will depend on how much paste you use. You can reduce or increase the amount depending on how smoky and spicy you want the bowl.

Do I have to use avocado and sweetcorn?

No. They're the toppings used in this recipe, but the bowl is completely customisable. Use whichever vegetables and toppings you enjoy.
