Ingredients

  • 1 large baking potato
  • 200g boneless, skinless chicken thighs, diced
  • 2 heaped tsp The Paste Co. Butter Chicken Paste
  • 30ml double cream
  • 15ml water
  • 30g mature Cheddar cheese, grated
  • Fresh coriander, chopped
  • Carrot sticks, to serve (optional)

Method

  1. Cook the baking potato until crisp on the outside and fluffy in the centre.
  2. While the potato cooks, heat a frying pan over a medium heat and cook the diced chicken thighs for 5–7 minutes until lightly golden.
  3. Stir in The Paste Co. Butter Chicken Paste, ensuring the chicken is evenly coated.
  4. Pour in the double cream and water, then simmer gently for 5–8 minutes until the sauce is thick, creamy and the chicken is cooked through.
  5. Slice the baked potato open and fluff the inside with a fork.
  6. Sprinkle over the grated Cheddar while the potato is still hot, allowing it to melt.
  7. Spoon the creamy Butter Chicken generously over the potato, letting the sauce soak into the fluffy potato.
  8. Finish with freshly chopped coriander and serve immediately with carrot sticks if desired.
